Fairfax Meadow would like to congratulate Browns Restaurants for their recent Awards at the World Steak Challenge 2017.
Browns were awarded Silver & Bronze for their Sirloin & Ribeye Steaks respectively. The World Steak Challenge is a prestigious international steak quality competition that rewards steaks for their tenderness and flavour following a rigorous blind taste testing process. Competition is fierce with entries from 17 countries around the world.
So where does it come from? All of Browns Steaks are produced from cattle born to traditional beef breed sires and reared on Brown’s own Red Tractor, Farm Assured British Farms. Fairfax Meadow are delighted to then be able to butcher this award-winning beef into steaks for Browns Restaurants.
It’s not just the sourcing process that leads to these award winning steaks but the whole supply chain. The cattle are free to graze the beautiful British farmland before being finished and specially selected for Browns based on their size, shape and fat levels. The beef is left to mature for at least 21 days for increased tenderness and extra succulence, before being cut into steaks. This careful selection, maturation and butchery process ensures that Browns receive only the finest quality British aged beef. It is so good it even carries the ‘Quality Standard Mark’ of approval. The process continues as the Browns’ Chefs are taken on a Meat Appreciation Course so they can treat the beef with the same great care and attention as the farmers and our butchers which further ensures the quality from gate to plate.
